How do I store sugarpaste / sugarpaste flowers?


Sugarpaste should be kept in a cool, dry place and definitely never in the fridge. Ideally place it in a food grade zip lock bag and then in an airtight food container. Sometimes people suggest to wrap it in clingfilm, but this can often make the sugarpaste ‘sweat’ and this moisture is not good for the sugarpaste, so that is why we tend to use zip lock bags, just make sure to expel as much air from around the sugarpaste as possible.
 
Like this the sugarpaste should stay in good condition for a few months. If you find the sugarpaste a little hard or dry after you have not used it for a while add a little white vegetable fat (like trex) and knead in well. If this doesn’t work add the smallest amount of glycerine and work it in till it become more pliable.
 
If you have already made flowers or figures from the sugarpaste a similar principle applies – keep in a cool, dry place out of sunlight, and in an airtight food container. It is also worth padding the base of the container with something like bubble wrap or foam to cushion the base and the sides if you have very delicate flowers. If you have to transport your flowers then it’s also worth looking at supporting them with rolled up kitchen roll, or placing in egg boxes for example.
 
Sugar flowers once made will last indefinitely if stored well, just don’t let them come in contact with moisture as this will ruin them.
