You're going to need a little gum tragacanth or CMC powder to add to your sugarpaste before you start - this will ensure your cake topper sets hard and retains its shape!

Red Dome

1. Take a chunk of red sugarpaste, roughly the size of a walnut, and roll this into a smooth round ball.

2. Next you will need to flatten the ball slightly using the palm of your hand and then, holding the flattened ball in one hand, use the bigger end of the ball modelling tool to create a slight indent in the centre of the ball. Gently press the ball tool into the sugarpaste and use a circular motion to widen the indentation until you have a domed semi-circle shape.

Making The Stalk

3. Next take a chunk of white sugarpaste, again roughly the size of a walnut, and knead some gum tragacanth into the sugarpaste. You need to add gum tragacanth so that it dries hard (this will ensure it does not lose its shape). Roll the white sugarpaste into a smooth ball.

4. Now you're going to need to make the ball into a cylinder shape. For the best results, use two cake smoothers and roll the sugarpaste between them to gain a tall, smooth and perfect cylinder shape.

Completing The Mushroom

5. Once you're happy with the shape, it's time to fit the two sugarpaste shapes together. Take your red sugarpaste dome and sit this on top of the cylinder. If the cylinder doesn't quite fit into the indentation of the red dome, use the ball modelling tool to widen the indentation until the cylinder slots into place. Use edible glue to stick them together.

6. Cut out some small white circles out of white sugarpaste and stick these to the top of the mushroom.

7. Finally, give the mushroom character some eyes by rolling two very small pieces of black sugarpaste into oval shapes. Stick these to the front of the mushroom using a little edible glue.
